In the development of Aarstiderne the challenge of sustainability is a key issue that is dealt with in various ways.
First of all the decision to convert the farm and forest land of Barritskov and later on two other farms to be farmed organically. In all a decision involving 1450 hectares. Today the Barritskov farming group remains the biggest organic unit in Denmark. Of the 1450 ha, 370 is forest, now also certified as a FSC forest.
Secondly; through introducing the concept of Aarstiderne on these farms and a number of other farms, ecology goes hand in hand with economy.
Financial sustainability is a precondition for securing the sustainability of the idea and the jobs created – and thereby of the organic farms.
This was made possible because - from the very beginning - the concept was built on a shared risk between the farmers and the customers through prepayment. Aarstiderne now stands out as an example of agriculture run without subsidies, giving hope to other organic farmers and challenging the conventional sector.
Thirdly ; Aarstiderne has made ecology contemporary and accessible. The problem of consumers wanting to buy organic food, but not being able to find it at the retailers is now solved. And on top of that you can add convenience, storytelling and simple, but up-to-date, trendy recipes.
Fourthly; Aarstiderne is a step on the way to the biggest challenge for humanity; reconnecting with the natural world.
