Sådan gør du
Bring en lille gryde i kog med salt. Nip bønnerne imens. Når vandet koger, tilsættes bønnerne. Lad dem koge op i 2 minutter. Derefter lægges de i iskoldt vand, til de er afkølet. Dryp dem godt af.
Skær parmesanosten i store flager. Pisk olie og hvidvinseddike sammen med salt, peber, citronskal og evt. hvidløg. Vend bønnerne i dressingen og vend rucolaen i til sidst og anret dem på et fad. Drys flager af parmesan over, og server.
